Bica is a Portuguese pasteurised cheese made of a blend of cow, goat and sheep milk (average weight 500gr).
It means "bag of cheese". When the curd is fresh it is placed in cheesecloth and twisted into a "bag." Then when the cheese becomes firm, the cloth is removed.
It has a distinctive mild and buttery savoury taste with a satin-like texture.
